WHere is a simplified version of a beverage from a new drinks list. Designed as a batch prepared mix which is loaded with the tastes associated with holiday season, which makes it excellent for a festive gathering. Save the extra cordial for breakfast cocktails, puddings, or to make more rounds of the drink.

Makes enough for 10 servings
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Drink (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Combine the listed components inside a pot, heat until it reaches a simmer, agitating to dissolve. After that, remove from the heat and leave to cool fully. Pour into a sealable bottle, seal and store in the fridge, where it will keep for about a month.
Preparing the Premix: Combine the specified spirits and syrup into one large bottle, allow it to infuse for one hour, then pass it through best through a fine cloth, so it's completely strained.
When ready to serve: Add 85ml of the cocktail base to a cocktail shaker containing ice, and agitate gently for about 60 seconds until cold. Strain into an cold coupe glass or similar, garnish with a few cranberries adding the final touch with a light spray of the essential oil over the top.
